500 gr fresh peas ( already shelled)
4 potatoes
1 leek
q.b. olio e.v.o, salt

PREPARATION OF THE RECIPE
Clean the leek, remove the first leaf, cut it and keep only the white part. Cut the leek into thin slices.
Cook the leek with oil for a few minutes, add peas and cubes of potatoes. (if you want to keep the bright color of the peas you have to take one more step: put only 10 seconds the peas in boiling water and immediately afterwards plunge into the ice)
Leave to sauté a few more minutes
Add the water to your pleasure ( if you want the more liquid velvety you will have to pour it abundantly over the vegetables, in you want more velvety, just stand on top of the vegetables
Cook for 40 minutes with low flame
Blend with the blender
Add a drop of sour cream or a sprinkling of turmeric or pepper to taste or simply a drizzle of oil
